I’m not a big fan of winter. Even though I’ve grown up in New England, I’m a bit wimpy when it comes to the cold. Plus, winter makes me so feel extra tired and lazy. That’s where our slow cooker comes in. I’m obsessed with them.
On days I’m too lazy or too busy to fit cooking a healthy dinner into my day, I throw a bunch of veggies in the crock pot. I described it to my students as magic! Actually, I also describe it to my boyfriend as magic. You throw a bunch of ingredients together, turn it on, and leave it during the day. Then, you come home and there’s delicious food ready for you.
See? Magic. It’s still chilly so a bowl of soup really hits the spot, and tbh this soup was pretty magical.

Feel free to switch it up and add other ingredients you love. A coworker told me she’s gifting me a leek she bought for a recipe and didn’t end up using… that would be PERFECT for lentil soup. Thinking another batch is in order…
