Instructions
  1. Preheat oven to 350° + line baking sheet
  2. Mix dry ingredients together in mixing bowl
  3. Slowly add coconut oil + coconut milk, mixing with the spatula the whole time
  4. Add in mint extract (the more the mint-ier), food coloring (a little goes a long way), and chocolate chips to taste
  5. At this point, you’ve done all the mixing you can really do with your spatula. Time to get your hands dirty
  6. If you find that your dough is too crumbly, add a dash of coconut milk or coconut oil
  7. Roll out small sections of dough with rolling pin on parchment paper or baking mat + cut with cookie cutters
  8. Bake 10-12 minutes or until slightly brown around the edges. Cookies that are a little on the toastier side will stay together better
  9. Take out of oven and let cool
  10. Now it’s time to decorate! I melted chocolate chips in the microwave in handfuls (about 45 seconds is usually good) Then, using a tiny spoon, mix the mini chips together and drizzle chocolate over the cookies
  11. Add sprinkles and a dash of sugar to the tops of the cookies while the chocolate is still cooling
  12. Try not to stuff them all into your face 😉
