I’ve been trying to get more creative in the kitchen. I’m all about EASY, healthy vegan meals where I can throw a bunch of ingredients into a pot, have it done in 30 minutes or less, and call it cooking. So baking doesn’t come as easily to me because you have to measure and be exact… BUT I’m learning! And luckily for you, my class was having an end-of-the-semester party so I whipped up a SWEET new recipe just in time for the holidays!

Vegan + gluten-free Christmas cookies
Pretty much every kid (and adult tbh) will tell you their favorite ice cream flavor is mint chocolate chip. OH MY GOODNESS these taste like mint chocolate chip ice cream in cookie form. Plus, they’re adorable.
I knew I wanted to create something different and that I wanted to use some of the cookie cutters I swiped from my mom’s baking cabinet when we moved. (Sorry, Mom!) A few of my classmates are gluten free so I threw some GF + vegan ingredients (chocolate chips, coconut milk, coconut oil, sugar, coconut flour, peppermint extract) together and BOOM these little Christmas trees appeared.
Okay, so it didn’t exactly happen like that… it was more along the lines of grabbing my index cards and favorite markers (obviously the new HUGE pack of fine point Sharpies my mom got me… craft lovers, you get how exciting this is) and writing out some baking measurements. I waited patiently for the cookies to bake and then came the best part: decorating! These cookies were almost as much fun to decorate as they were to eat. Almost. Plus, you can get really creative with icing, sprinkles, etc. if you use Christmas tree cookie cutters like I did.
Another reason I’m excited about this recipe is because I baked the cookies in the toaster oven and it was sooooo easy. Long story short, I couldn’t find my large baking sheet at first but then I realized the little rolling/baking mat I bought on a whim at TJ Maxx (who now sells online too btw…) was actually for toaster ovens so it all worked out.
Moral of the story: even college kids can make these in their dorms in between studying for finals. You’re welcome 😉
