Let’s get one thing straight: I was NEVER one for Valentine’s Day. Instead, I was that annoying friend that would go on and on about how stupid this “Hallmark Holiday” was and how your significant other should love you every day of the year. Even if I was in a relationship, I wouldn’t be caught dead celebrating it. What happened? Well, I’m planning to be an elementary school teacher so between DIY glitter valentines and wanting to do something special for my boyfriend who is always making me feel special (sorry not sorry for the cheesiness!), I realized Valentine’s Day isn’t so bad. Tommy and I decided not to make a big deal about it, so we went out to my favorite local vegan restaurant, Organic Garden Cafe, the night before for a delicious dinner. I couldn’t help but get a bit corny with some V-Day decorations- must be the teacher in me! We then spent Valentine’s Day attempting to build a snow fort, creating our own AMAZING baked vegan mac n cheese recipe, and devouring our homemade chocolate covered strawberries. It ended up being a low-key day spent with one of my favorite people. I really couldn’t have asked for a better (or yummier) day!Long story short, I spent years loathing a day that is all about letting the people in your life know how much you care about them. Whether they’re your family, friends, or significant other, there’s really nothing better than celebrating the people you love.
